2 Ingredient Pumpkin Spice Muffins

That’s right.

Don’t adjust your eyes.

This recipe requires just TWO ingredients – it does not get much easier!  I found this idea on Sweet Verbena via Pinterest.

  • 1 box of cake mix (I recommend Spice Cake mix)
  • 1 can of pumpkin (15 oz)

How to make:

  • Preheat your oven to 350.
  • Combine both ingredients in a bowl.

  • Portion batter into cupcake pan.  You can use cupcake liners or just grease each cup.  We had a little bit of extra batter, so Lily Bean had the chance to use her new mini cake pan.

  • pumpkin muffinsBake for 20-25 minutes (or until an inserted toothpick comes out clean).
  • Let cool
  • Optional: top with powdered sugar or cream cheese icing

    But.. how do they taste!?!?! I would be concerned that they do not rise with out eggs?

    I love that you call your daughter lily bean.. my daughter’s name is hunter jean and we call her jean bean..I cant wait to try this recipe…I wish I would have had it before I just bought a bunch of cake mixes..LOL (none of which were spice) I will be getting it next grocery trip! ;0)

      LOL! I have heard that chocolate cake mix (esp devil’s food) tastes great, too. Love the name Hunter! :)
