Need a quick and easy chicken dinner that’s also fresh and light tasting?
We love this recipe for Skinny Taco Chicken!
Serves: 4
You will need:
2 boneless skinless chicken breasts, thawed
1 packet of taco seasoning
fat free sour cream
How to make:
Preheat oven to 350 F.
Empty packet of taco seasoning into a large ziploc bag.
Place chicken in bag, one piece at a time, and shake until completely coated.
Lay chicken in a casserole dish (I coated mine with non-stick cooking spray) and bake for 45 minutes at 350 F (until chicken is no longer pink in the middle).
When finished cooking, cut each chicken breast in half (one half per serving) and place on plates.
Top each piece with fresh salsa and a dollop of sour cream.
